Yazoo & Jester King Collaboration – Elm & Fitzhugh
As these summer days get warmer and warmer, we are all in desperate need of a cold, refreshing drink. Luckily, Nashville’s Yazoo Brewing Company read our minds to create a beer just in time for the dog days of summer. Jayson and Matt discuss Elm & Fitzhugh, a collaborative beer with Jester King Brewery, out of Austin, Texas.
This beer is a part of Yazoo’s Embrace the Funk, a series of sour and wild ale beers spearheaded by Brandon Jones. All beers are made with wild yeasts and souring microbes. This summer, Embrace the Funk collaborated with Jeff Stuffings from Jester King to create a farmhouse, Belgin style ale. Thus, Elm & Fitzhugh was created.
Brewed with spelt and Pilsen malt, it is hopped with Saaz. Different than some beers, Elm & Fitzguh underwent an open fermented process, where the it was fermented naturally with Nashville air and a local Nashville yeast. Additionally, it was fermented with Jester King’s house mixed culture and Yazoo’s Saison yeast.
Matt describes the beer as having a “lemony bouquet flavor,” with some hints of tartness. And being sold in 500 ml. bottles, with a 4.8% alcohol level, it is definitely a sharable beer. Check it out this limited beer at Yazoo’s tasting room or visit respected retailers to have a sip for yourself!
